Florida's food trucks are dramatically cleaner than its restaurants
83.6% of graded food trucks hold an A. For sit-down restaurants it is 40.3%. The gap is real, and part of it is not what you would guess.
There are 11,631 licensed mobile food vehicles in Florida. Almost nobody writes about them, and the assumption most people carry — a truck is a riskier bet than a restaurant — turns out to be backwards.
The numbers
Across 10,475 graded food trucks and 46,411 graded sit-down restaurants:
- A grades — 83.6% of trucks, 40.3% of restaurants
- D or F — 3.9% of trucks, 26.1% of restaurants
- Average score — 93 for trucks, 71.7 for restaurants
And per inspection, across 31,908 truck inspections and 260,680 restaurant inspections:
- High-priority findings per visit — 0.38 for trucks, 1.29 for restaurants
- Total findings per visit — 2.18 for trucks, 6.14 for restaurants
A sit-down restaurant picks up roughly three and a half times as many high-priority findings per inspection as a food truck.
Now the honest part
Some of that gap is real and some of it is arithmetic, and it would be dishonest to hand you the first number without the second.
There is simply less truck to inspect. A truck has no dining room floor, usually no customer toilets, no walk-in cooler, no ceiling tiles, far less shelving and a fraction of the equipment. Remember that floors alone are 7.9% of all findings in the state and toilets and handwashing another 4.2% — categories a truck barely has. Smaller menus mean less cold holding and fewer things to cross-contaminate.
So a chunk of "2.18 findings versus 6.14" is just surface area.
But that does not explain all of it. High-priority findings are about food handling, not fabric — temperatures, raw meat over ready-to-eat food, sick staff, bare hands. A truck has all of those risks. It still records 0.38 per visit against 1.29.
The most likely reason is unglamorous: a truck is one or two people who can see the entire kitchen from where they stand. There is no walk-in to lose track of, no third shift, no new hire out of eyeline.
