Observed brown gravy (47F - Cold Holding); house made slaw (44F - Cold Holding); raw fish (47-50F - Cold Holding); butter (45F - Cold Holding) in walk-in cooler for less than four hours per person in charge. Establishment has door to walk-in cooler open for delivery. Person in charge moved product to walk-in freezer too cool. Discussed with person in charge options to keep food at or below 41F while stocking a delivery.
