Certified food manager unable to answer basic Food Code questions pertaining to safe operation of establishment. Observed CFM unaware how to calibrate a probe thermometer. Coached on the spot.
Employee has not received adequate training related to their assigned duties as evidenced by the inability to answer basic food safety questions. Observed male cooks unaware of the minimum cooking temperature of chicken. This was explained to them on the spot.

Equipment in poor repair. Observed in poor repair the floor door frame panel for walk in freezer. Observed broken door gasket of reach in cooler closer to 3CS across of stove.
Ice buildup in reach-in freezer and/or walk-in freezer. Observed ice build up the floor of the walk in freezer.
