No paper towels or mechanical hand drying device provided at handwash sink. In kitchen, handwashing sink has no paper towels.
No proof provided that food employees are informed of their responsibility to report to the person in charge information about their health and activities related to foodborne illnesses. Operator stated, they hire temp employees for seasonal work. New employees hired for less than three weeks. Emailed reporting agreement to chef.

Observed marinated raw chicken stored inside lowboy cooler at cookline, no date marking. Per operator, raw chicken prepared two days prior to inspection. Operator put date marking on raw chicken.
