Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. In hot holding cabinet cooked pork ribs (128F - Hot Holding); cooked beef brisket (127F - Hot Holding); per operator recently removed from unit for several orders, less than 30 minutes. Operator moved foods to smoker to rapidly reheat above 165F. Operator additionally turned up hot holding cabinet.
Mobile food dispensing vehicle opening not kept closed during operation. Observed back door to truck left open.
Single-service articles improperly stored. Box of napkins stored on floor under shelving.

In hot holding cabinet, cooked pork ribs (120F - Hot Holding); cooked shredded pork (107F - Hot Holding) approximately 10 minutes per operator. Operator placed in smoker grill for quick reheating.
