Smoked chicken on time/temp control with no time mark. Operator informed me the chicken was removed from temperature at 10:00am. Operator wrote correct time during time of inspection.
Worn, torn and/or soiled floors/carpeting. Observed floor soiled with grease and food debris underneath fryer on cook line.

Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed collard greens 125F, barbecue beans 114F, 123F, and brisket 112F, at 12:30 in steam table at kitchen area. Per manager held since 11:00. Observed low water level in steam table. Manager filled water level and reheated food items to properly hot hold. New temperatures at 1:00: collard greens 135F, barbecue beans 145F, and brisket 135F.
Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Observed pulled chicken 68F at 12:15 stored in closed pan for catering in walk in cooler. Per manager cooked, prepped, and cooling since 12:15. Pulled chicken 68F at 1:00. Manager opened pulled chicken container to allow proper cooling.
Food-contact surface soiled with food debris, mold-like substance or slime. Observed accumulation of mold-like substance in soda nozzles next to takeout window and around ice chute at soda machine in dining area.

Bowl or other container with no handle used to dispense food. Observed containers with no handle inside the sugar and flour bins. Manager discarded containers during inspection.
