Smoked chicken on time/temp control with no time mark. Operator informed me the chicken was removed from temperature at 10:00am. Operator wrote correct time during time of inspection.

Observed collard greens 125F, barbecue beans 114F, 123F, and brisket 112F, at 12:30 in steam table at kitchen area. Per manager held since 11:00. Observed low water level in steam table. Manager filled water level and reheated food items to properly hot hold. New temperatures at 1:00: collard greens 135F, barbecue beans 145F, and brisket 135F.
