Employee touching ready-to-eat food with their bare hands - food was not being heated as a sole ingredient to 145 degrees F or immediately added to other ingredients to be cooked/heated to the minimum required temperature to allow bare hand contact. Establishment has no approved Alternative Operating Procedure. Employee placed cooked hashbrowns into hot steam well holder with bare hands. Discussed with employee to wear gloves or use utensils instead of bare hands when handling ready to eat. Employee reheated hashbrowns to.
Quaternary ammonium sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized. Quaternary ammonia tested at zero PPM. Operator readjusted sanitizer to 1:50 PM that time of inspection.
Toxic substance/chemical improperly stored. Adhesive remover and chemical spray bottle store next to dry storage rack, located next to three compartment sink. Manager relocated all chemicals to an approved location at time of inspection.
