Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control has no time marking and the time removed from temperature control cannot be determined. Observed cooked shrimp at 108F. Manager advised that shrimp is kept on time, however no time mark posted. Shrimp had been cooked 40 minutes earlier. Inspected provided TIME AS A PUBLIC HEALTH CONTROL WRITTEN PROCEDURES. Manager marked time
