Per operator items were not prepared or portioned to day. Items have been out of temperature for approximately 2 hours. Employee placed items in walk-in to rapid cool.

Time/temperature control for safety food thawed in an improper manner. On the cookline under the heat lamp, frozen cooked sausage was thawing. The sausage was moved to the walk in cooler to thaw under refrigeration.
