Quaternary ammonium sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized. Triple sink santizing compartment set up and in use at 0ppm. Person in charge began remaking.
Stop Sale issued on time/temperature control for safety food due to temperature abuse. Oat milk, yogurt, whipped cream in bottom of makeline reach in cooler at 46-49F. Ambient temperature of unit 49F. Observed top cooler with openings that may be causing temperature to rise. Person in charge unsure how long items have been out of temperature.

Exterior door has a gap at the threshold that opens to the outside. Light visible under back door.
