Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Ran the dish machine multiple times and chlorine sanitizertested at 0 PPM. Operator primed the dish machine and checked chlorine container and lines. The dish machine was ran again and the chlorine sanitizer is now testing at 50 PPM.
Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. Container of raw beef stored on top of container of raw octopus inside double door reach in cooler in prep area. Items stored based on minimum required cooking temperature.
