Wiping cloth solution exceeding the maximum concentration allowed stored in a location that could result in the cross contamination of food, equipment, utensils, linens, single-service, or single-use articles. Sanitizer Bucket (Chlorine 200+ppm) on counter next to pizza oven used to cut and pack pizzas, next to single service pizza savers. Operator diluted and moved sanitizer to proper concentration, 100ppm chlorine.
Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. In walk-in cooler, observed cut tomatoes and housemade buttermilk ranch dressing in large, covered, plastic containers. Spoke with operator about proper cooling techniques to encourage rapid cooling, and provided associated English and Spanish handouts.

Observed cooked chicken wings on counter by fryer, housemade Tomato sauce on pizza make table, time being tracked with no written plan. Provided time as a public health control form and explained proper usage to operator.
