Whole meat roast hot held at less than 130 degrees Fahrenheit. Observed at their front counter heating lamp: Whole Rack of ribs (127F - Hot Holding). Operator stated it had been there for approximately 1hr. Operator placed it back in the oven to get to temp.
Food stored on floor. Observed an ice water jug for costumers stored on the floor. Operator placed it on a shelf.
In-use utensil stored in standing water less than 135 degrees Fahrenheit. Observed a scoop in standing 87F water. Operator removed the scoop.
Opened employee beverage container in a cold holding unit with food to be served to customers. Observed an opened employee drink in their cooler. Operator removed it.

Employee washed hands with cold water. Observed employee washing hands with cold water in the hand wash sink. Had employe wash hands with hot water.
Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Observed sanitizer bucket at 200ppm chlorine. Operator remade bucket and tested it at 100ppm chlorine.
Certified Food Manager or person in charge lacks knowledge of foodborne illnesses and symptoms of illness that would prevent an employee from working with food, clean equipment and utensils, and sing. Observed no knowledge of the big 6. Emailed operator a copy.
Employee washed hands in a sink other than an approved handwash sink. Observed operator wash hands in the triple sink. Had them rewashed hands in the hand wash sink.
Establishment has no written procedures for employees to follow in response to a vomiting or diarrheal event where the vomit or diarrhea is discharged onto surfaces in the establishment. Observed no vomit clean up plan. Emailed operator a plan.
