Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. cooked beef (124F-127F - Hot Holding) in steamtabl3 across from sandwich making station. Operator raised temp of steam table because it was set too low. Retested temp 20 minutes later and beef hotter by 20 degrees. Also, cooked sausage (90-98F - Hot Holding) in pan at grill. Operator asked cook to reheat sausage back up.

Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Observed chemical chlorine sanitizer solution at over 200ppm. Employee added water to sanitizer to be at 100ppm.
Ceiling/ceiling tiles/vents soiled with accumulated food debris, grease, dust, or mold-like substance. Observed multiple ceiling tiles dusty throughout kitchen.
Employee beverage container on a food preparation table or over/next to clean equipment/utensils. Observed employee drink stored on storage shelf above food. Manager removed and stored properly.
Food stored on floor. Observed employee store bucket of juice on floor while prepping. Employee removed from floor and placed on additional bucket.
