Observed in walk in cooler in 2 gallon container with lid on. pizza sauce (ingredients added) (45F @3:20pm - Cooling since 11:45am - 45F cooling @3:40pm) at current rate of cooling product will not reach 41F within 4 hours- operator moved product to reach in freezer to quick chill.
