Operator stated that that she had just finished a rush, took an ambient air temp of cooler at 39F. Re took temps after 30 minutes, cut lettuce was at 43F, turkey 43F, cut cheese 46F
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed grits on top of toaster on prep line at 112F, operator discarded. Discussed possibility of holding grits on time.
