On buffet line, scrambled egg (126F - Hot Holding); baked potatoes (127F - Hot Holding). Employee in charge of breakfast stated items have been out approximately 3 hours. Employee will turn warmers up more from now on.
Handwash sink not accessible for employee use at all times. When arrived, clean wiping clothes and red sanitizer bucket in handwash sink in kitchen. Employee moved items.
Manager or person in charge lacking proof of food manager certification. No manager training for establishment. Establishment already on open warning for no certified food manager training. General manager has class scheduled for June 9 in Orange Park.
