Establishment conducting ROP of raw meat with no HACCP plan. Establishment receives large portion of raw ribeye steak and cuts steak off large portion then vacuum seals and stores in walk-in cooler with no labeling. Inspector explain HACCP to manager and manger stated they will just store ribeyes in metal pans and not vacuum packaged.
