Shell eggs not stored at an ambient air temperature of 45 degrees Fahrenheit or less. Observed raw shell eggs on counter opposite reach in cooler. Per operator less than 1 hour. Operator moved to reach in cooler.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed grits (120F - Hot Holding); oatmeal (127F - Hot Holding) per operator less than 2 hours. Holding unit was not plugged in. Operator plugged in holding unit and reheated products.
