Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Reach in cooler: mashed potatoes (120F - Cooling) @ 3:37; cooling since 3:07- 116F @ 4:06 - At current rate of cooling product will not reach 70F within 2 hours. Operator placed in freezer to quick chill. On stove: meat loaf (62F-Cooling) @ 3:46; cooling since 2:30- 61F @ 4:19. At current rate of cooling product will not reach 41F within 6 hours. Operator place in freezer to quick chill.
Operator is not properly tracking/marking the number of days ready-to-eat, time/temperature control for safety food prepared onsite was held at refrigeration temperatures prior to freezing in order to properly date mark the food when it is thawed and held at refrigeration temperatures again. Observed Cooked beef in reach in freezer made 10/5 not date marked. Educated operator on proper date marking procedure.
