Date marked combined ready-to-eat, time/temperature control for safety food not consumed/sold within 7 days of preparing/opening the earliest ready-to-eat time/temperature for safety ingredient. See stop sale. Pan containing cinnamon butter made in-house with a butter blend with date mark of 10/2. Manager stated he did not believe 10/2 was the correct date, but could not determine when it was made.
Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Dish machine chlorine 0ppm. Manager primed the machine, still 0ppm. Manager replaced the sanitizer bucket, then chlorine 50ppm. Inspector instructed manager to resanitize all dishes that have been sanitized using the dishwasher machine today.
Raw animal food stored over/not properly separated from ready-to-eat food. Jug containing raw pooled eggs stored on shelf directly above commercially packaged roast beef inside reach-in cooler near walk-in cooler. Manager moved the eggs to the bottom shelf during this inspection.
Raw animal foods not properly separated from one another based upon minimum required cooking temperature when stored in a freezer - not all products commercially packaged. Pans containing frozen raw chicken stored directly above box containing frozen raw fish inside reach-in freezer near walk-in cooler. Manager moved the raw chicken away from the raw fish during this inspection.

Employee at cookline handled her personal phone with gloved hands, then proceeded to fill a bottle with margarine with the same gloved hands without first washing hands and putting on new gloves. Manager had the employee wash hands before continuing to work at cookline. 2. Employee with gloved hands at cookline sanitized the cutting board with a wet wiping cloth, then handled bread with the same gloved hands without first washing hands and putting on new gloves. Manager had the employee discard the bread and wash hands before continuing to work at the cookline.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. 1. On prep table in server station: butter packets (68F - Cold Holding). Manager stated the butter packets have been sitting at room temperature for approximately 90 minutes and moved them to a freezer to rapidly reach 41F. 2. Inside reach-in cooler in server station: whipping cream (48F - Cold Holding). Manager stated the cream was left in the counter at room temperature for approximately 15 minutes one hour prior.
Toxic substance/chemical improperly stored. Spray bottle containing glass cleaner stored on top of rolling rack, directly above cans containing food. Manager removed the glass cleaner from the area during this inspection.

Backflow prevention device missing at threaded faucet on handwash sink near cookline. 3. Backflow prevention device missing at hose connection on side of building, near patio area.

Time/temperature control for safety food thawed in an improper manner. Pan containing chicken thawing at room temperature on prep table near cookline. The chicken is still partially frozen. Manager moved the chicken back into the cooler to continue to thaw under refrigeration.

Establishment has no approved Alternative Operating Procedure. Employee at cookline touched hamburger buns, lettuce, and onions with bare hands. Manager voluntarily discarded all during this inspection and had the employee wash hands and put on gloves before continuing to prepare the burgers.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. 1. Inside reach-in cooler drawer below grill: steak (63F - Cold Holding). Employee at cookline stated the steaks finished thawing approximately 30 minutes prior. Manager moved the steaks to a freezer to rapidly cool to 41F. 2. Inside walk-in cooler: cheese (45F - Cold Holding); fish (45F - Cold Holding); crab dip (45F - Cold Holding). Manager stated all items were moved into the walk-in cooler from another cooler approximately two hours prior. Manager adjusted the temperature of the cooler and moved all items to a freezer to rapidly cool to 41F. cheese (45F 1:25, 41F 1:55 - Cooling); fish (45F 1:25, 39F 1:55 - Cooling); crab dip (45F 1:25, 41F 1:55 - Cooling); steak (63F 1:20, 39F 2:00 - Cooling)

No proof provided that food employees are informed of their responsibility to report to the person in charge information about their health and activities related to foodborne illnesses. One new employee cutting vegetables in kitchen. Employee does not have proof of food handler training or proof they have been informed of their health reporting responsibilities. Inspector provided person in charge with copy of the health reporting agreement during this inspection.

Employee at cookline stated the fish was thawed earlier this morning. Inspector had employee remove fish from reduced oxygen environment during this inspection.
