On prep table in table, rice 87F at 9:35am (heated cooling from approximately 7:30am). Manager spread rice in shallow pans and moved to freezer to rapid chill to 70F.
Employee failed to wash hands before putting on gloves to initiate a task working with food. Employee changed gloves after handling raw steak without first washing hands. Reviewed proper washing procedures with employee and she washed hands and put on new gloves.
