Observed on their salad station: Hard boiled eggs (55F - Cold Holding); Chopped tomatoes (54F - Cold Holding); Shredded cheese (55F - Cold Holding). Operator stated they had been out for approximately 2hrs. Operator placed the items in their reach in cooler.
Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. Observed commercially reduced oxygen packaged fish still frozen but set to thaw in the walk in without being removed from their packages. Operator removed them from their packages.
Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed their can opener holder with heavy buildup.
Single-service articles not stored inverted or protected from contamination. Observed multiple single service articles not inverted in the kitchen. Operator inverted them.
Wiping cloth quaternary ammonium compound sanitizing solution not at proper minimum strength. Observed their sanitizer buckets at 0ppm quaternary. Operator remade them to 200ppm.
