Employee failed to wash hands before putting on gloves to initiate a task working with food. Observed operator begin work placed gloves on without washing hands. Educated operator on washing hands prior to placing gloves on before working with food.

The owner moved all products to other reach-in cooler. Observed raw chicken (47F - Cold Holding); raw ground (48F - Cold Holding) in walk-in cooler. The owner placed ice on raw products. Observed ham (46F - Cold Holding); chicken (47F - Cold Holding); lasagna (48F - Cold Holding); pasta salad (47F - Cold Holding) in walk-in cooler. The owner moved products to front counter reach-in cooler.
