Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Cook line cut ham 63f less than 3 hours. Operator placed pan of cut ham in colder holding unit to bring temperature down.

Nonfood-contact surface soiled with grease, food debris, dirt, or dust. Upon inspection observed walk-in cooler fan covers with debris build up present.
Old labels stuck to food containers after cleaning. Upon inspection observed old labels on clean stacked pans on clean equipment rack right side of ware washing area.
