Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed butter at 80F. Operator stated that the butter had been out for approximately 2 hours. Operator moved butter to freezer to rapidly cool. Observed sliced cheddar cheese at 48F, operator stated cheese had been out approximately 2 hours. Operator put ice on cheese and moved it to reach in cooler to rapidly cool.
