Inside walk-in cooler: raw shell eggs (49F ambient - Cold Holding); ham (50F - Cold Holding); ground beef (49F - Cold Holding); utter (50F - Cold Holding). Ambient air temperature is 49F. Manager stated the temperature was 40F two hours prior when she had checked. The manager adjusted the dial and the air immediately began blowing cold. Inspector had the manager add ice to the items to rapidly cool to 41F.

Approved Alternative Operating Procedure states that barehand contact is limited to sandwich making. It also states that the employee placing raw meat on the grill will not handle ready-to-eat foods. Inspector observed the employee who placed raw hamburger meat on the grill handle ready-to-eat salad with bare hands. Inspector also observed employee at fryer touch jalapeño poppers with bare hands as they were plated. Inspector did not observe any employees use hand sanitizer as Indicated in the AOP during this inspection.
