Observed : the kitchen dish wash machine 0 ppm for chlorine. This reached 100 ppm for chlorine. ^^corrected on site** ALSO, the bar dish wash machine 0 ppm for chlorine. New jugs were being added.

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed: boiled egg at 56° in a flip top reach-in cooler, sitting above the food pans. This was placed in an ice bath, and reached 42° in 13 minutes. ALSO, sausage cut in half, in the drawers below the flat top, 44°. This was placed in the walk-in freezer and reached 34° in 12 minutes.
