In vertical cooler in server area at front line milk (46F - Cold Holding); whipped cream mix (46F - Cold Holding) Operator states door was probably left open for an extended period of time. Milk was voluntarily discarded. Operator moved whipped cream mix to walk in cooler.
Operator is doing a special process, conducting reduced oxygen packaging, cooking time/temperature control for safety food to a time and temperature combination lesser than those in the Food Code or operating a molluscan shellfish tank for human consumption without a HACCP plan approved by the Division of Hotels and Restaurants. Discussed with OPQ trainer Doug P. Establishment withdrew application to sous vide eggs. Observed establishment in the process of cooking eggs using sous vide method during inspection.
