Wiping cloth quaternary ammonium compound sanitizing solution not at proper minimum strength. Quaternary bucket at front prep area 50 ppm. Operator prepared new solution, retesting at 200ppm.

Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Dishmachine tested at 10 ppm. Operator replaced sanitizer solution and primed machine, retesting at 100ppm.
