Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed chicken at 57F and cream cheese at 66F on speed rack by side door. Employee states has been out on the rack for approximately one hour. Operator moved chicken and cream cheese to walk in cooler.
No proof of required state approved employee training provided for employee hired more than 60 days ago.
