Operator stated items prepared/cooling since 3:00, at this rate will not reach 41F within 4 hours, added bags of ice to facilitate faster cooling.

Employee wearing single-use gloves exited and reentered establishment/kitchen then washed gloved hands with soap and water at hand washing sink, dried with paper towels and continued preparing food wearing same pair of single-use gloves. Operator discussed with employee who then removed gloves, washed hands and put on new pair of single-use gloves.
