Cooked/heated time/temperature control for safety food not cooled from 135 degrees Fahrenheit to 41 degrees Fahrenheit within 6 hours. In the walk in cooler, chicken (52F - Cold Holding) cooked and cooled the previous day and stored in walk in cooler overnight. Chicken container sealed with moisture on the lid. Operator labeled as do not serve.

Discussed use of gloves with employee.
