Heat strip failed to turn black to indicate the sanitization temperature of 160 degrees Fahrenheit was achieved on the dish surface and/or high temperature holding thermometer did not reach 160F. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired.

Observed Raw shrimp over spinach not in commercial packaging at walk in freezer, raw chicken tenders not in commercial packaging over French fries at reach in freezer on cook line. Operator stored all products properly.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Flip top cooler: sliced cheese (52F - Cold Holding) Per operator, not prepared or portioned today. Per operator, out of temperature for approximately 30 minutes. Operator cut portion in half and placed in lower portion of cooler.
Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. walk in cooler: diced chicken (49F - Cooling) at 1:50; cooling since 11:00 - 47F at 2:31 Observed in deep container with tight fitting lid. At current rate of cooling product will not reach 41F within 4 hours. Operator placed product in walk in freezer to quick chill.
Handwash sink used for purposes other than handwashing. Observed Perforated pan in hand wash sink at bar. Employee removed pan.
