Employee working fryers handled personal phone and immediately handled fry scoop and began scooping french fries without washing hands. Manager coached employee on proper hand washing procedures.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. On make line in kitchen, gyros (lamb) 62F. Gyros placed into service approximately two hours prior. Gyros moved to reach in cooler to cool.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. In warming tray on make line, beef burgers 116F. Burgers prepared approximately 30 minutes prior. Burgers voluntarily discarded.
