Equipment and utensils not properly air-dried - wet nesting. Observed pans on drying shelf across from three compartment sink wet nesting.

Single-service articles improperly stored.observed single serve aluminum pans stored face up instead of face down. Observed manager inverting them properly to face down.
Time/temperature control for safety food thawed in an improper manner. Observed corned beef brisket being thawed in standing water, in a bowl. Not under running cold water. Manager corrected immediately by putting in sink under cold running water.
Wall soiled with accumulated grease, food debris, and/or dust. Observed mold like substance on wall where soda bag in box is.
