Food-contact surfaces not sanitized after cleaning, before use. Do not use equipment/utensils not properly sanitized. Employee not aware of there's no quaternary in the dispenser at three compartment sink, all food contact surfaces was not sanitized properly. Inspector recommended operator to re sanitize all clean food equipments and containers.
Quaternary ammonium sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized. Tested 0ppm. No sanitizing solution in dispenser and not available in the entire establishment. Inspector observed approved chlorine solution available in the establishment, and helped setup three compartment sink with 100ppm chlorine solution as an alternative food contact surfaces sanitizer, provided some chlorine test strips for future set up.
Chemical test kit not used to ensure proper sanitization of equipment and utensils when using a chemical sanitizer.
