Employee touched bare body part and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Employee at front counter pushed glasses up on her nose and immediately handled clean tongs working with food items without washing hands. Manager coached employee on proper hand washing procedures. Employee washed hands correctly.

Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control has no time marking and the time removed from temperature control has been greater than four (4) hours. See stop sale. On cook line in kitchen, container of fried onions prepared more than six (6) hours prior does not have time mark. Fried onions discarded.
