In-use knife/knives stored in cracks between pieces of equipment. Observed an in-use knife stored between the reach in cooler and a prep table. The operator properly stored the knife.
In-use utensil not stored with handle above the top of time/temperature control for safety food and rim of the container. Observed tongs used for mozzarella sticks in the reach in freezer stored with the handle touching the food. The operator properly stored the tongs.

Wiping cloth quaternary ammonium compound sanitizing solution not at proper minimum strength. Observed quaternary sanitizer buckets filled with soap from the three compartment sink. The operator discarded the solution and refilled with quaternary solution.
