Probe thermometer not accurate within plus or minus 2 degrees Fahrenheit. Observed the digital probe thermometer reads 34° in a proper ice bath.

The door is being kept shut, the internal freezer door is being kept ajar and a service tech has already been out and has ordered a new defrost timer, the old one may be stuck on, per management.
Food-contact surface soiled with food debris, mold-like substance or slime. Observed: the dining room soda nozzles have build up: specificallya¿¿Barqs, lemonade, diet Coke and Dr. Pepper.

Observed: cheese 44°, gyro meat 44° and bulk cheese 44° in the walk-in cooler. Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed the fried chicken, back corner on the cook line hot hold, 128/129°. These were placed back in the fryer for quick reheating.
Food-contact surface soiled with food debris, mold-like substance or slime. Observed: the Barqs nozzle with build up. This was cleaned during the inspection. **Corrected On-Site* ALSO, the tea nozzles have build up.
Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed: the gaskets on the tall reach-in freezer door on the cook line has build up.
Unnecessary items/unused equipment on the premises. Observed: a stuffed office chair outside the back door.

Raw animal food stored over/not properly separated from ready-to-eat food. Observed raw hamburger stored over cut lettuce in the walk-in cooler. Beef moved below.
Toxic substance/chemical improperly stored. Observed restroom cleaner stored by Peach Purée, restroom cleaner over sauces in the drive thru, and de-limer spray bottle stored next to/over gloves for food service, in dry goods. All were moved to cleaning.
Handwash sink used for purposes other than handwashing. Observed a nylon scrub pad stored in the drive thru hand wash sink. Scrubby was removed.
Employee beverage container on a food preparation table or over/next to clean equipment/utensils. Observed 4 drinks throughout stored next to food or single serve items. All employee drinks discarded or moved below.
Food stored on floor. Observed a bag of white/cream sauce on the floor propping the walk-in freezer door open. Sauce was put on a shelf.
Old labels stuck to food containers after cleaning. Observed clean dishes with multicolored stickers still attached. All were removed and placed in the sink.
