Per operator item not prepared or portioned today, and placed in this unit approximately 2 hours ago. Observed item overfilled. Operator removed excess and placed in reach in to quick chill.
Warewashing sanitizing solution exceeding the maximum concentration allowed. Upstairs prep room - Sanitizer Bucket (Quaternary over 500ppm). Operator made new solution. Quaternary 400ppm.

Wiping cloth quaternary ammonium compound sanitizing solution not at proper minimum strength. Front counter and Cookline - Sanitizer Bucket (Quaternary less than 100ppm). Operator made new solution. Quaternary 400ppm.
