Observed 3 compartment sink not set up in the correct order. Explained employees the correct order, and 3 compartment solutions were set up correctly immediately.

Single-service articles improperly stored. Observed disposable food containers and cups in cardboard boxes stored on the floor. As per owner, it was for carry out inside the vans. Owner moved them immediately.

Observed quat test kit instead of chlorine test kit when using chlorine sanitizer in the establishment. Owner ordered the correct test kit while I was conducting the inspection.
Shelves with rust that has pitted the surface. Observed rusted shelving used to stored clean pans in the kitchen.
Interior of oven/microwave has accumulation of black substance/grease/food debris. Observed some food residue inside alto shaam hot cabinet not in use at the time of the inspection.Owner cleaned it up completely immediately.

No handwashing sign provided at a hand sink used by food employees. Missing handwashing sign at the hand sink located in the kitchen by the 3 compartment sink. Sign was printed and posted.

Trash receptacles not provided where needed in establishment. Observed missing trash container by the hand sink station.
Wet wiping cloth not stored in sanitizing solution between uses. Observed wet towel left on prep table in between uses. Employee set up the chlorine sanitizer container at 50 ppm, and placed the towel inside.
