Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed cut melon (45F - Cold Holding); almond milk (46F - Cold Holding) in the glass door reach in cooler in the prep area. Observed fresh garlic and oil mix (68F - Cold Holding) in the kitchen. The operator stated the above potentially hazardous foods had been held for approximately 2 hours. The operator moved the items to another cooler.
Handwash sink not accessible for employee use at all times. Observed a handwashing sink blocked by a cart on the buffet line. The operator moved the cart.
No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. Observed no quaternary test kit.
No paper towels or mechanical hand drying device provided at handwash sink near the mop sink. The operator provided paper towels for the hand sink.
No written procedures available for use of time as a public health control to hold time/temperature control for safety food. The operator was unable to locate the time as public health control form. A form was emailed to the operator.
Employee wearing jewelry other than a plain ring on their hands/arms while preparing food. Observed multiple employees wearing watches and bracelets while engaged in food preparation.
