Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed cut lettuce 58F, Cut tomatoes 57F, Feta cheese at 58F at 2 hours per Operator in reach in cooler across from dishwasher. Operator put all items on ice during inspection.

Food stored on floor. Observed pot of potatoes on the floor near the mop sink, operator panned potatoes and moved them into the walk in cooler.

Plumbing system in disrepair. Observed hot water control on hand sink in kitchen on cook line in need of repair, leaking water when the faucet is not turned on.
Time/temperature control for safety food thawed in an improper manner. Observed frozen fish thawing in buckets in kitchen, educated the operator of proper thawing techniques, suggested either under running cool water or under refrigeration. Operator moved fish to walk in cooler.
