Observed Open air cooler: chicken salad (52F - Cold Holding); no shell hard boiled egg (52F - Cold Holding); tuna salad (53F - Cold Holding); chicken Cesar wrap (50F - Cold Holding). Products made at 0900. Person in charge placed products in reach in cooler to cool. Open air cooler design not keeping products 41F or below. Observed whipped butter (67F - Cold Holding) on front counter. Person in charge placed some on time control and rest in freezer to cool.
Menu does not identify which items contain raw or undercooked animal foods covered by the consumer advisory. Observed smoked salmon bagel and smoked salmon avocado sandwiches no identified as raw on menu board. Person in charge added a star to both items on menu.
Raw/undercooked animal food offered and establishment has no written consumer advisory. Raw animal foods must be fully cooked prior to service. Observed no consumer advisory for raw smoked salmon. Provided consumer advisory to person in charge and they hung on front counter.
