Operator not complying with the procedures stated in the Process Waiver or HACCP plan approved by the Division of Hotels and Restaurants. Observed operator Reduced Oxygen Packaging fresh fish without using 10k bags, per the process waiver. Operator opened packages and ordered 10k bags.
Raw animal food stored over/not properly separated from ready-to-eat food. In Walk in cooler observed, raw soft shell crabs and raw tuna, salmon and yellowtail being stored over ready to eat deli meats. Operator rearranged products.
