Cooked/heated time/temperature control for safety food not cooled from 135 degrees Fahrenheit to 70 degrees Fahrenheit within 2 hours. Observed refried beans cooling on counter at 115F after 1.5 hours. Manager had employee put beans in reach in cooler with top off.
No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. Observed chlorine sanitizer in bar sink but no chlorine strips. Manager cleaned out sink and changed to quat sanitizer.
