Observed Gouda (47F - Cold Holding); Cream Cheese (49F - Cold Holding); Raw Shell Eggs (50F - Ambient Air Temperature); Taylor Ham (47F - Cold Holding) in reach-in cooler to the right of the cook line. Operator turned cooler down and started to remove items to place in other refrigeration for rapid cooling.
