Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Observed in low boy; guacamole (51F @ 2:05 - Cooling since 11:00); diced tomatoes (54F at 12:05 - Cooling since 10:45). Tomatoes cooled in deep plastic container with lid on. Operator advised to discard items if they do not make it to 41F within the required time frame. Operator reduced temperature of cooler and left items opened to assist with the cooling process.
