Employee touching ready-to-eat food with their bare hands - food was not being heated as a sole ingredient to 145 degrees F or immediately added to other ingredients to be cooked/heated to the minimum required temperature to allow bare hand contact. Establishment has no approved Alternative Operating Procedure. Observed employee handle lettuce with bare hand, person in charge spoke to employee.
Food-contact surfaces not sanitized after cleaning, before use. Do not use equipment/utensils not properly sanitized. Observed employee washing dishes with soapy water then rinsing and placing to air dry with no sanitizing step, person in charge stopped employee. Explained proper triple sink set up. Person in charge will rewash dishes with sanitizing step.
Toxic substance/chemical improperly stored. Observed chemical spray bottle stored with single service items. Chemical placed in appropriate location.
